150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed

PREPARATION
Place cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash thoroughly with a pinch of sea salt until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5-7 minutes until tender-crisp and slightly charred, then remove from the pan.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Increase the skillet heat to medium-high and add the remaining olive oil.
Place the salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for an additional 2-3 minutes until the fish is opaque and flakes easily.
