Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon fillet served with garlicky green beans and creamy mashed cauliflower, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon dry and season with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and golden.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining oil, green beans, and minced garlic; sauté for 3-5 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and mash it thoroughly with a fork or immersion blender until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
