Seared Salmon with Garlic Green Beans and Mashed Sweet Potato
Pan-seared salmon served with creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans
0.5 tsp Extra Virgin Olive Oil
0.5 tsp Ghee
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potato in a pot of salted water and bring to a boil; cook until tender, about 10-12 minutes.
Drain the sweet potatoes and mash thoroughly with the ghee and a pinch of sea salt until smooth.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then place in the skillet skin-side down; sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the green beans and minced garlic with a splash of water; sauté for 3-5 minutes until tender-crisp.
Plate the salmon alongside the mashed sweet potato and green beans, finishing with a fresh squeeze of lemon juice.
