Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served over fluffy brown rice with a side of garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
8 oz Wild Atlantic Salmon
1/2 cup cooked Brown Rice
1 cup fresh Green Beans
2 tsp Avocado Oil
2 cloves Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions or use pre-cooked rice and set aside.
Trim the ends of the green beans and mince the garlic cloves.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat one teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan and let rest.
In the same skillet, add the remaining teaspoon of avocado oil and the green beans.
Sauté the beans for 3 minutes, then add the minced garlic and cook for another 1-2 minutes until the beans are tender-crisp.
Plate the salmon over the brown rice with the garlic green beans on the side.
Drizzle the lemon juice over the salmon and beans before serving.
