Crispy Bacon Cheddar Stuffed Potatoes
Russet potatoes baked until crispy and stuffed with savory ground turkey and sharp cheddar, finished with smoky bacon and a dollop of Greek yogurt.
INGREDIENTS
0.5 medium Russet potato
4 oz Ground turkey
0 slice Uncured bacon
0.5 oz Sharp cheddar cheese
0.25 cup Plain Greek yogurt
0 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 tbsp Fresh chives
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the potato clean, prick it several times with a fork, and rub the skin with olive oil and sea salt.
Place the potato on the baking sheet and bake for 45 to 50 minutes until the skin is crispy and the inside is tender.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy, then remove and crumble it.
In the same skillet, drain excess fat and brown the ground turkey with garlic powder and black pepper until fully cooked.
Slice the baked potato down the center, fluff the interior with a fork, and stir in the cooked turkey and half of the cheddar cheese.
Sprinkle the remaining cheese on top and return the potato to the oven for 2 to 3 minutes until the cheese is melted and bubbly.
Top the stuffed potato with a dollop of Greek yogurt, the crumbled bacon, and fresh chives before serving.
