Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
150g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and dice the sweet potato into small cubes, then boil in water for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them with a splash of water or broth until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes.
Flip the salmon and cook for another 3-4 minutes until the exterior is golden and the center is just opaque.
Remove the salmon from the pan and add the green beans and minced garlic, sautéing for 5 minutes until tender-crisp.
Serve the seared salmon over the sweet potato mash with the garlic green beans on the side.
