Seared Salmon Filet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared sockeye salmon served over a velvety garlic cauliflower mash with a side of tender steamed green beans.
INGREDIENTS
6.5 ounces Sockeye Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
Add green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer steamed cauliflower to a food processor with minced garlic, half of the olive oil, and a pinch of salt, then blend until smooth.
Pat the salmon dry and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place salmon skin-side down in the pan and sear for 4 minutes, then flip and cook for another 3 minutes until opaque and cooked through.
Serve the seared salmon over the cauliflower mash with the green beans on the side.
