2 cups Cauliflower Florets

PREPARATION
Pat the salmon fillet completely dry with a paper towel and season with sea salt and black pepper.
Place cauliflower florets in a steamer basket over boiling water and steam for 10 to 12 minutes until very soft.
Add the green beans to the same steamer for the final 5 minutes of cooking until they are crisp-tender.
Transfer the steamed cauliflower to a bowl and mash with the minced garlic and a pinch of salt until smooth.
Heat the avocado oil in a cast-iron or non-stick skillet over medium-high heat.
Place the salmon in the hot pan, skin-side down, and sear for 4 to 5 minutes until the skin is golden and crisp.
Carefully flip the salmon and cook for another 2 to 3 minutes until the fish is opaque and flakes easily.
Serve the salmon immediately over the cauliflower mash with the green beans on the side.
