Preheat your oven to 375°F (190°C).
In an oven-safe skillet, heat the avocado oil over medium heat and add the cubed sweet potatoes and diced red onion.
Sauté the vegetables for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and golden-brown.
Add the chopped turkey bacon to the skillet and cook for another 3 minutes until slightly crisp.
Stir in the fresh spinach and cook just until wilted, then spread the mixture evenly across the bottom of the pan.
In a medium bowl, whisk together the whole eggs, liquid egg whites, sea salt, black pepper, and garlic powder until well combined.
Pour the egg mixture over the vegetables and bacon in the skillet.
Drizzle the maple syrup in a thin stream across the top of the egg mixture.
Transfer the skillet to the oven and bake for 15-18 minutes, or until the eggs are puffed and the center is set.
