Spicy Sriracha Ramen with Tender Pork
Lean pork loin simmered in a spicy, aromatic broth with tender bok choy and a soft-boiled egg for a satisfyingly silky finish.
INGREDIENTS
5 oz pork loin
1 large egg
0.75 oz soba noodles
2 cup low-sodium chicken broth
1 cup bok choy
0.5 cup shiitake mushrooms
1 tbsp sriracha
1 tbsp tamari
1 tsp fresh ginger
1 clove garlic
1 tsp sesame oil
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Bring a small pot of water to a boil and carefully lower the egg into the water; cook for 6.5 minutes, then immediately transfer to an ice bath.
Slice the pork loin into very thin strips and season with sea salt and black pepper.
In a medium pot, heat the sesame oil over medium-high heat and sear the pork strips until browned, about 2 minutes.
Add the minced garlic and grated ginger to the pot, sautéing for 30 seconds until fragrant.
Pour in the chicken broth, tamari, and sriracha, bringing the liquid to a gentle simmer.
Add the sliced shiitake mushrooms and soba noodles to the broth; cook for 4 minutes.
Stir in the chopped bok choy and cook for an additional 2 minutes until the greens are wilted and the noodles are tender.
Peel the cooled egg and slice it in half.
Pour the ramen into a large bowl and top with the soft-boiled egg halves before serving.
