In a medium mixing bowl, whisk together the eggs, Greek yogurt, sea salt, black pepper, and smoked paprika until the mixture is smooth and creamy.
Spread the chorizo and spinach mixture evenly across the bottom of the prepared baking dish.
Pour the egg and yogurt mixture over the chorizo and spinach, then sprinkle the grated parmesan cheese over the top.
Place the dish in the oven and bake for 15 to 18 minutes, or until the eggs are set but still have a slight jiggle in the center.
Remove from the oven, garnish with freshly chopped chives, and serve immediately while warm.
