Seared Salmon with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with garlic-steamed green beans and a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
150g Sweet Potato
100g Green Beans
1 tsp Avocado Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Peel and dice the sweet potato into 1-inch cubes.
Place sweet potato in a pot of boiling water and cook for 10-12 minutes until tender.
Drain the sweet potato and mash until smooth, adding a splash of water if needed for consistency.
Steam the green beans and minced garlic in a steamer basket for 5-7 minutes until crisp-tender.
Pat the salmon dry with a paper towel and season with a pinch of sea salt.
Heat avocado oil in a non-stick skillet over medium-high heat.
Place salmon in the pan and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes.
Serve the salmon over the sweet potato mash with green beans on the side, finished with a squeeze of fresh lemon juice.
