Crispy Baked Tofu with Peanut Sauce
Extra-firm tofu baked until golden and crispy, then tossed in a creamy, savory peanut sauce and served alongside vibrant steamed broccoli and protein-rich edamame.
INGREDIENTS
6 oz Extra-firm tofu
0.5 tbsp Natural peanut butter
1 tbsp Tamari
1 tbsp Rice vinegar
1 tsp Sriracha
0.5 tsp Garlic powder
0.5 cup Shelled edamame
1 cup Broccoli florets
0.5 tsp Toasted sesame oil
0.5 tsp Sesame seeds
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Press the extra-firm tofu for 15 minutes using a tofu press or heavy skillet to remove excess water.
Cut the tofu into 1-inch cubes and toss them in a bowl with the garlic powder until evenly coated.
Spread the tofu cubes on the baking sheet and bake for 25-30 minutes, flipping halfway through, until edges are golden and crispy.
While the tofu bakes, whisk together the peanut butter, tamari, rice vinegar, sriracha, and toasted sesame oil in a small bowl until smooth.
Steam the broccoli florets and shelled edamame for 5-7 minutes until they are bright green and tender-crisp.
Once the tofu is finished, transfer it to a large bowl and toss with the peanut sauce until every cube is well coated.
Plate the peanut tofu over the steamed vegetables and garnish with sesame seeds before serving.
