130g Sweet Potato (approx. 1 medium)
100g Green Beans
1 tsp Ghee
PREPARATION
Peel and cube the sweet potato, then boil in water until tender and mash until smooth using a splash of the cooking water for consistency.
Steam the green beans over simmering water for 5 to 7 minutes until they are bright green and tender-crisp.
Pat the salmon fillet completely dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the ghee in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan and sear for 4 minutes, then flip and cook for another 3 minutes until the exterior is golden.
