5 ounces Salmon Fillet
2 cups Cauliflower Florets
1 cup Asparagus Spears
1 teaspoon Olive Oil
1 clove Garlic
1 tablespoon Ghee
PREPARATION
Bring a pot of water to a boil and place a steamer basket inside.
Add cauliflower florets to the basket and steam for 10-12 minutes until very soft.
Add asparagus to the steamer for the last 4 minutes of cooking until bright green and tender-crisp.
Remove cauliflower and place in a food processor or bowl; blend or mash with ghee, minced garlic, salt, and pepper until smooth.
Pat the salmon fillet dry and season with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Place salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crisp.
