Crispy Pan-Seared Steak with Garlic Butter
Pan-seared grass-fed sirloin basted in a fragrant garlic-herb butter and served with crisp-tender roasted asparagus for a satisfying, savory finish.
INGREDIENTS
6 oz grass-fed sirloin steak
1 tbsp grass-fed butter
2 whole garlic cloves
1 sprig fresh rosemary
1 sprig fresh thyme
10 medium asparagus spears
1 tsp avocado oil
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking to bring it to room temperature.
Pat the steak completely dry with paper towels and season both sides with the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the avocado oil, swirling to coat the pan.
Place the steak in the hot skillet and sear undisturbed for 3-4 minutes until a deep, golden-brown crust forms.
Flip the steak and immediately add the butter, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the skillet slightly and use a large spoon to continuously baste the steak with the foaming herb butter for another 2-3 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to lock in the juices.
While the steak rests, add the asparagus to the same skillet and sauté in the remaining garlic butter for 3-5 minutes until tender and bright green.
Slice the steak against the grain and serve alongside the buttery asparagus.
