Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the potato clean, pierce it several times with a fork, and bake for 45-50 minutes until the center is tender.
While the potato bakes, cook the bacon slice in a skillet over medium heat until crispy, then remove and chop into small bits.
In the same skillet, add the ground turkey and season with sea salt, black pepper, and garlic powder, sautéing until fully browned and cooked through.
Once the potato is cool enough to handle, slice it in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin wall in the skin.
Mash the potato flesh with the Greek yogurt and half of the cheddar cheese, then fold in the cooked ground turkey.
Stuff the mixture back into the potato skins, top with the remaining cheddar and the chopped bacon bits.
Place back in the oven or under the broiler for 2-3 minutes until the cheese is bubbly and golden.
Garnish with sliced green onions and serve immediately.
