Crispy Golden Mac and Cheese Bites
Baked chickpea pasta and lean chicken breast are tossed in a creamy, protein-packed cheese sauce and finished with a crispy, golden-brown crust.
INGREDIENTS
0.5 cup chickpea elbow pasta
0.5 cup low-fat cottage cheese
0.75 oz shredded sharp cheddar cheese
0.38 cup minced cooked chicken breast
2 tbsp egg whites
2 tbsp whole wheat panko breadcrumbs
0.25 tsp garlic powder
0.25 tsp smoked paprika
0.13 tsp sea salt
0.13 tsp black pepper
PREPARATION
Preheat your oven to 375°F and lightly grease a standard muffin tin with avocado oil spray.
Boil the chickpea elbow pasta in salted water for 2 minutes less than the package directions until al dente, then drain.
Place the cottage cheese in a high-speed blender and process until completely smooth and velvety.
In a large mixing bowl, combine the cooked pasta, blended cottage cheese, shredded cheddar, minced chicken, egg whites, garlic powder, smoked paprika, salt, and pepper.
Stir the mixture thoroughly until every noodle is well-coated in the protein-rich cheese sauce.
Spoon the mixture into the prepared muffin tin, pressing down firmly with the back of the spoon to ensure the bites hold their shape.
Sprinkle the whole wheat panko breadcrumbs evenly over the top of each muffin cup.
Bake for 15 to 18 minutes until the cheese is bubbling and the breadcrumb topping is beautifully golden.
Allow the bites to cool in the pan for at least 5 minutes to set before carefully removing them with a silicone spatula.
