Golden Beef and Rice Stuffed Peppers
Roasted bell peppers filled with savory ground beef and fluffy rice, simmered in a rich tomato sauce for a vibrant and satisfying meal.
INGREDIENTS
7 oz 93% lean ground beef
2 large bell peppers
0.13 cup cooked brown rice
0.25 cup tomato puree
1 tbsp grated parmesan cheese
0.25 cup diced yellow onion
1 clove minced garlic
0.5 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
0 tsp extra virgin olive oil
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers, remove the seeds and membranes, and set aside.
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and minced garlic, sautéing for 3-4 minutes until translucent and fragrant.
Add the ground beef to the skillet, breaking it up with a spoon, and cook until fully browned.
Stir in the cooked brown rice, tomato puree, dried oregano, sea salt, and black pepper until well combined.
Spoon the beef and rice mixture into the hollowed-out bell peppers, pressing down gently to fill them completely.
Place the stuffed peppers upright in a baking dish and sprinkle the tops with grated parmesan cheese.
Add 2 tablespoons of water to the bottom of the dish, cover with foil, and bake for 20 minutes.
Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is golden.
