2.5 cups Cauliflower florets
1.5 cups Green Beans
1 tbsp Ghee
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket until they are bright green and crisp-tender.
While vegetables steam, season the salmon fillet with salt and pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until a golden crust forms.
Transfer the steamed cauliflower to a bowl or food processor; add the remaining ghee, minced garlic, and a pinch of salt, then mash or blend until smooth.
Plate the garlic mashed cauliflower alongside the steamed green beans and top with the seared salmon fillet.
