Seared Salmon with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over velvety garlic cauliflower mash with steamed green beans and a hint of fresh lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1/4 cup Non-fat Greek Yogurt
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket to cook until crisp-tender.
Pat the salmon fillet dry and season with a pinch of sea salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is cooked through.
Transfer the steamed cauliflower and garlic to a food processor, add the Greek yogurt, and blend until completely smooth and velvety.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve alongside the steamed green beans with an optional squeeze of fresh lemon.
