PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Slice the zucchini into 1/2-inch thick rounds and place them on one side of the baking sheet.
Drizzle the zucchini with 0.5 tsp of olive oil and season with half of the salt and pepper, tossing to coat evenly.
Place the salmon fillet on the other side of the baking sheet and pat it dry with a paper towel.
