6.5 oz Wild Sockeye Salmon
1.5 cups Cauliflower florets
1 cup Green beans
1 tbsp Extra virgin olive oil
2 cloves Garlic, minced
1 tbsp Fresh lemon juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10-12 minutes.
During the last 5 minutes of the cauliflower steaming, add the green beans to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl or food processor; add the minced garlic, half of the olive oil, and a pinch of sea salt, then blend until smooth and velvety.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the hot pan and sear for 4-5 minutes per side until the exterior is golden and the center is just opaque.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice.
