INGREDIENTS
6.2 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green beans
1 tsp Extra Virgin Olive oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Place the steamed cauliflower in a blender or food processor with a pinch of salt and pepper, and process until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5-7 minutes until tender-crisp and the garlic is fragrant.
Remove the beans from the skillet and set aside.
Increase the heat to medium-high and add the remaining olive oil to the skillet.
Season the salmon with salt and pepper, then place it skin-side down in the hot pan.
Sear the salmon for 4-5 minutes until the skin is golden and crisp, then flip and cook for another 2-3 minutes until desired doneness.
Serve the salmon over the cauliflower mash with the garlic green beans on the side.
