INGREDIENTS
6 oz Wild Atlantic Salmon
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Grass-fed Ghee
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or blender with the Greek yogurt, minced garlic, salt, and pepper, then pulse until smooth and creamy.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat the ghee in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden-brown crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Plate the cauliflower mash first, top with the seared salmon, and serve the green beans on the side with a fresh lemon wedge.
