PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a small bowl, mince the garlic and whisk together with the dried rosemary, dried thyme, sea salt, black pepper, and half of the olive oil.
Trim any excess fat from the sirloin steak and rub the herb and garlic mixture evenly over all sides of the meat.
Trim the ends of the green beans and slice the carrots into thin rounds.
Toss the vegetables on the prepared baking sheet with the remaining olive oil and a pinch of salt.
Move the vegetables to the edges of the pan and place the seasoned steak in the center.
Roast for 15 to 20 minutes, or until the beef reaches your preferred level of doneness and the vegetables are tender.
