1/2 cup Cooked Brown Rice
1.5 cups Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions or reheat pre-cooked rice.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until golden brown.
Flip the salmon and cook for another 3-4 minutes until the skin is crisp and fish is cooked through, then remove from pan.
In the same skillet, add the remaining teaspoon of olive oil and the minced garlic, sautéing for 30 seconds.
Add the green beans and two tablespoons of water to the pan, then cover with a lid to steam for 3 minutes.
Remove the lid and sauté the beans for another minute until the water evaporates and the beans are tender-crisp.
