100g Green Beans
1.5 tbsp Olive Oil
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato then steam until fork-tender.
Mash the steamed sweet potato until smooth and creamy seasoning with a pinch of salt.
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat one tablespoon of olive oil in a skillet over medium-high heat and sear the salmon for 4 minutes per side.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until tender-crisp and fragrant.
