Seared Salmon Fillet with Herb-Cauliflower Mash and Sautéed Green Beans
Pan-seared salmon served over a herb-infused cauliflower mash with a side of garlic-sautéed green beans, finished with a bright and zesty squeeze of lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 tbsp Nonfat Greek Yogurt
1 tbsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Fresh Dill
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from pan.
In the same pan, add the remaining oil, garlic, and green beans, sautéing until tender-crisp.
Blend or mash the steamed cauliflower with Greek yogurt, fresh dill, salt, and pepper until smooth.
Plate the salmon over the cauliflower mash, serve with green beans, and finish with a squeeze of lemon juice.
