Seared Salmon Fillet with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed broccoli and creamy garlic cauliflower mash, finished with a squeeze of lemon and a pinch of flaky sea salt.
INGREDIENTS
6.25 oz Salmon Fillet
1 cup Broccoli florets
1.5 cups Cauliflower florets
1 tsp Ghee
1 clove Garlic, minced
PREPARATION
Place cauliflower florets and the minced garlic in a steamer basket over boiling water and steam until very tender, about 10-12 minutes.
While cauliflower is steaming, pat the salmon fillet dry and season both sides with a pinch of salt and black pepper.
Heat the ghee in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Add the broccoli florets to the steamer during the last 5 minutes of the cauliflower cooking time until they are bright green and tender-crisp.
Remove the cauliflower and garlic from the steamer and transfer to a bowl; mash thoroughly or use an immersion blender until creamy and smooth.
Serve the seared salmon alongside the garlic cauliflower mash and steamed broccoli.
