Seared Sirloin with Garlic Green Beans and Mashed Cauliflower
Pan-seared sirloin and a sunny-side-up egg served over cauliflower mash and garlic green beans, finished with a sprinkle of crunchy sea salt.
INGREDIENTS
5.5 oz Sirloin Steak
1 Large Egg
1.5 cups Cauliflower florets
1 cup Green beans
1 tsp Olive oil
1 clove Garlic
PREPARATION
Steam the cauliflower florets until very tender, then mash or blend with a pinch of salt until creamy.
Trim the green beans and sauté them in a non-stick pan with minced garlic and a splash of water until crisp-tender.
Season the sirloin steak generously with sea salt and cracked black pepper.
Heat the olive oil in a skillet over medium-high heat and sear the steak for 3 to 4 minutes per side for medium-rare.
Remove the steak to rest and, in the same pan, fry the egg until the white is set but the yolk remains runny.
Plate the mashed cauliflower, slice the steak and place it on top, add the fried egg, and serve with the garlic green beans.
