PREPARATION
Thinly slice the yellow onion and finely shred the green cabbage.
Heat the ghee in a large cast-iron skillet over medium heat until shimmering.
Add the onions to the skillet with the sea salt and sauté for 10-12 minutes until they become soft and golden brown.
Push the onions to the side of the pan and add the chicken brats, searing them for 2-3 minutes per side until a dark char develops.
Pour the light lager beer into the skillet, scraping the bottom to release the flavorful browned bits, then cover and simmer for 5 minutes.
Remove the lid and continue cooking until the liquid has mostly evaporated and the onions are jammy.
