2.5 cups Cauliflower Florets
1 cup Green Beans
1 tbsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl, add the minced garlic and half of the olive oil, and blend or mash until smooth and creamy.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon with a pinch of salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the center is just opaque.
