Seared Salmon with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-mashed cauliflower with a side of steamed broccoli and a bright squeeze of lemon.
INGREDIENTS
5.5 oz Wild Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
1 tsp Avocado Oil
1 tsp Ghee
1 clove Garlic
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Add broccoli florets to the steamer during the last 4 minutes of cooking until they are vibrant green and crisp-tender.
While vegetables steam, pat the salmon dry with a paper towel and season both sides with sea salt and black pepper.
Heat avocado oil in a stainless steel or cast iron skillet over medium-high heat until shimmering.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Transfer the steamed cauliflower and garlic to a bowl, add the ghee, and mash with a fork or immersion blender until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed broccoli with a fresh lemon wedge.
