Seared Salmon Fillet with Garlic Mashed Potatoes and Steamed Asparagus
Pan-seared salmon fillet served with creamy garlic-infused mashed potatoes and crisp steamed asparagus, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Salmon Fillet
350g Yukon Gold Potatoes
150g Asparagus
1.5 tbsp Ghee
0.5 tbsp Olive Oil
3 cloves Garlic
PREPARATION
Peel and cube the potatoes, then boil in salted water until tender.
Trim the woody ends off the asparagus and steam for 4-5 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes skin-side down.
Flip the salmon and cook for another 3-4 minutes until the center is just opaque.
Drain the potatoes and mash them with ghee and minced garlic until smooth and fluffy.
Plate the salmon alongside the mashed potatoes and asparagus, garnishing with a fresh lemon wedge.
