PREPARATION
Preheat your oven to 400°F and roast the cubed sweet potatoes with a light spray of oil for 20-25 minutes until tender.
Heat a non-stick skillet over medium heat and add the avocado oil and sliced turkey sausage.
Sauté the sausage for 3-4 minutes until golden brown, then add the fresh spinach and cook until just wilted.
