2 Large Eggs
100g Sweet Potato
1 cup Fresh Spinach

PREPARATION
Preheat oven to 400°F
Toss cubed sweet potatoes with half the olive oil and roast for 20-25 minutes until tender and golden
In a non-stick skillet over medium heat add the remaining oil and brown the lean ground beef until fully cooked
