Seared Salmon with Steamed Green Beans and Garlic Mashed Potatoes
Pan-seared salmon fillet served with garlic-infused mashed potatoes and crisp-tender green beans, finished with a bright squeeze of lemon and fresh dill.
INGREDIENTS
7 oz Salmon Fillet
150g Yukon Gold Potatoes
1 cup Green Beans
1 tsp Ghee
2 cloves Garlic
2 tbsp Unsweetened Almond Milk
1 tbsp Lemon Juice
PREPARATION
Peel and chop the Yukon Gold potatoes into small chunks and boil in a pot of salted water for 12-15 minutes until tender.
While the potatoes boil, place the green beans in a steamer basket over simmering water for 5-7 minutes until they are bright green and crisp-tender.
Drain the potatoes and return them to the pot, mashing them with minced garlic, unsweetened almond milk, and half of the ghee until creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes on the first side to develop a golden crust.
Flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Serve the seared salmon alongside the garlic mashed potatoes and steamed green beans, finishing the dish with a fresh squeeze of lemon juice.
