PREPARATION

Slice the remaining half of the banana into thin rounds.
Heat the coconut oil in a large non-stick skillet over medium heat.
Pour the batter into the skillet to form three or four pancakes.
Press the banana slices into the top of the wet batter and cook until bubbles form on the surface.
