Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with charred roasted broccoli and creamy garlic-mashed cauliflower, finished with a squeeze of bright lemon.
INGREDIENTS
5.5 oz Wild Atlantic Salmon
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
2 tbsp Nonfat Greek Yogurt
1 tsp Olive Oil
1 clove Garlic, minced
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of sea salt, then roast for 15-20 minutes until the edges are charred and tender.
While the broccoli roasts, steam the cauliflower florets over boiling water until they are very fork-tender, about 10-12 minutes.
Drain the cauliflower thoroughly and transfer to a blender or food processor with the minced garlic and Greek yogurt, pulsing until velvety and smooth.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat with the remaining olive oil.
Place the salmon in the pan and sear for 4-5 minutes on the first side to develop a golden crust, then flip and cook for another 2-3 minutes until cooked through.
Spoon the garlic cauliflower mash onto a plate, top with the seared salmon, and serve alongside the roasted broccoli.
