PREPARATION
Peel and cube the sweet potato into small, uniform pieces.
Steam or boil the sweet potato cubes until tender, approximately 8-10 minutes, then set aside.
Heat the olive oil in a non-stick skillet over medium heat.
Add the turkey mince to the skillet and cook, breaking it apart with a spatula, until browned and fully cooked.
Add the diced zucchini and halved cherry tomatoes to the pan and sauté for 3-4 minutes until softened.
