INGREDIENTS
5.5 oz Salmon Fillet
300g Cauliflower florets
150g Green Beans
2 cloves Garlic
2 tbsp Nonfat Greek Yogurt
0.5 tsp Extra Virgin Olive Oil
PREPARATION
Place the cauliflower florets and garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or blender, add the Greek yogurt and a pinch of salt, and blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan, skin-side up, and sear for 4-5 minutes until golden and crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Serve the seared salmon over a bed of garlic cauliflower mash with the steamed green beans on the side.
