Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with garlicky green beans and creamy sweet potato mash, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
150g Sweet Potato
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Steam or boil the sweet potato until tender, then peel and mash until smooth and creamy.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of sea salt and black pepper, then place in the skillet skin-side down.
Sear the salmon for 4-5 minutes until the skin is crisp, then flip and cook for another 3-4 minutes until cooked through.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet along with the minced garlic and green beans.
Sauté the green beans for 3-5 minutes until tender-crisp and fragrant.
Plate the sweet potato mash and green beans alongside the salmon, finishing with a fresh squeeze of lemon juice.
