Crispy Pan-Seared Steak with Garlic Butter
Cast-iron seared sirloin steak basted in aromatic garlic ghee, served with tender roasted asparagus and earthy sautéed mushrooms.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Ghee
2 cloves Garlic
1 sprig Fresh rosemary
1 cup Asparagus
1 cup Cremini mushrooms
1 tsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat a cast-iron skillet over high heat and add the avocado oil until it begins to shimmer.
Place the steak in the hot skillet and sear for 3 to 4 minutes without moving it to develop a deep, golden crust.
Flip the steak and reduce the heat to medium-high, then add the ghee, smashed garlic cloves, and the rosemary sprig to the pan.
Tilt the pan slightly and use a large spoon to continuously baste the steak with the foaming garlic butter for another 2 to 3 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
In the same skillet with the remaining juices, add the asparagus and sliced mushrooms, sautéing for 5 minutes until tender and browned.
Slice the steak against the grain and serve alongside the sautéed vegetables.
