Mix the ingredients by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a compact mini loaf and place it in the prepared baking dish.
Drape the bacon slices over the top of the loaf, tucking the ends underneath to secure them.
Brush 1 tablespoon of the sugar-free BBQ sauce evenly over the bacon-wrapped loaf.
Bake for 20 minutes, then remove from the oven and brush with the remaining 1 tablespoon of BBQ sauce.
Return to the oven for another 10-15 minutes, or until the internal temperature reaches 165°F and the bacon is crisp.
Let the meatloaf rest for 5 minutes before slicing to ensure it stays juicy.
