Seared Beef Strips with Garlic Mashed Potatoes and Sautéed Green Beans
Pan-seared lean beef strips served with creamy garlic-infused mashed potatoes and crisp-tender green beans, finished with a hint of savory cracked pepper.
INGREDIENTS
5.5 oz Beef Top Sirloin strips
175g Yukon Gold Potatoes
1 cup Fresh Green Beans
1/4 cup Non-fat Greek Yogurt
1 tsp Olive Oil
3 cloves Garlic
PREPARATION
Peel and chop the potatoes into uniform chunks and boil in a pot of salted water until fork-tender, about 15 minutes.
While potatoes boil, mince the garlic cloves and trim the ends off the green beans.
Drain the potatoes and return them to the pot, mashing them thoroughly with two cloves of minced garlic and the Greek yogurt until creamy.
Season the beef strips with salt and cracked black pepper.
Heat half of the olive oil in a large skillet over medium-high heat and sear the beef strips for 2-3 minutes per side until browned, then remove from the pan.
Add the remaining oil to the same skillet and sauté the green beans and the remaining garlic for 4-5 minutes until they are crisp-tender.
Serve the seared beef over the garlic mashed potatoes with the green beans on the side.
