Tender bell peppers are roasted until vibrant and filled with a savory blend of lean ground beef, fluffy rice, and aromatic spices simmered in a rich tomato sauce.
INGREDIENTS
6.5 oz Ground beef (93% lean)
2 medium Bell peppers
0.25 cup Cooked brown rice
0.5 cup Tomato puree
1 tbsp Grated parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Onion powder
1 tsp Dried oregano
0 tsp Olive oil
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and internal membranes.
In a large skillet over medium heat, brown the ground beef until fully cooked, then drain any excess fat.
Stir in the cooked brown rice, tomato puree, garlic powder, onion powder, oregano, sea salt, and black pepper.
Lightly brush the outside of the bell peppers with olive oil and place them upright in a baking dish.
Spoon the beef and rice mixture into the peppers, packing it down gently to fill them to the top.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil, sprinkle the tops with grated parmesan cheese, and bake for another 10 minutes until the peppers are soft and the cheese is golden.
