INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans and add them to the steamer for the last 5 minutes of cooking.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place salmon skin-side down in the pan and sear for 4-5 minutes until skin is crisp, then flip and cook for another 2-3 minutes.
Transfer the steamed cauliflower and garlic to a blender or food processor with the remaining olive oil and a pinch of salt, blending until smooth and creamy.
Serve the seared salmon atop the garlic cauliflower mash with the steamed green beans on the side.
