Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served over nutty brown rice with garlic-sautéed green beans, finished with a bright squeeze of fresh lemon.
INGREDIENTS
5.5 oz Wild Atlantic Salmon
1/2 cup Cooked Brown Rice
150g Fresh Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Cook the brown rice according to package instructions or reheat pre-cooked rice.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy and golden.
Flip the salmon and cook for an additional 2-3 minutes until the fish is opaque and flakes easily.
Remove the salmon from the pan and set aside to rest.
In the same pan, add the remaining teaspoon of olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the green beans and a tablespoon of water to the pan, covering with a lid for 2 minutes to steam.
Remove the lid and sauté the beans for another 2-3 minutes until they are tender-crisp.
Plate the salmon over the brown rice alongside the garlic green beans and serve with a fresh lemon wedge.
