Golden Beef and Rice Stuffed Peppers
Lean ground beef and rice sautéed with aromatic turmeric, then baked inside vibrant bell peppers until the filling is savory and tender.
INGREDIENTS
7 oz ground beef
2 large bell peppers
0.25 cup cooked white rice
0.5 cup tomato puree
0.5 tsp ground turmeric
0.5 tsp garlic powder
0.5 tsp onion powder
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp fresh parsley
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
Slice the tops off the bell peppers and carefully remove the seeds and membranes from the inside.
In a large skillet over medium-high heat, cook the ground beef until fully browned and crumbled.
Stir the cooked rice, tomato puree, turmeric, garlic powder, onion powder, sea salt, and black pepper into the beef.
Spoon the beef and rice mixture into the hollowed-out bell peppers, pressing down gently to pack them.
Place the peppers upright in the baking dish, cover with foil, and bake for 25 minutes.
Remove the foil and bake for another 5-10 minutes until the peppers are tender and the tops are slightly golden.
Garnish with fresh chopped parsley before serving.
